Homemade “soup cubes”
Create your own flavorful vegetable bouillon cubes easily, especially now when soup vegetables (root vegetables) are budget-friendly.
Use regular soup vegetables like celery, carrots, parsley, parsnips, and any other favorites – the herb choices are limitless: lovage, thyme, rosemary. I always make sure the herb blend isn't too intense, as it applies to the bouillon cube.
Finely chop the washed and peeled vegetables (I use the peels for a fresh vegetable soup) and herbs, preferably in a food processor. Add 10 to 20 grams of salt per 100 grams of vegetables and mix well. Fill the mixture into clean (preferably sterilized) small jars with screw caps; this "soup essence" stays fresh in the refrigerator for up to a year and works wonderfully for sauces too. Enjoy homemade bouillon without the need for store-bought bouillon cubes!
