Salt the steak properly

On this subject, opinions abound. However, here's my simple tip for achieving the perfect steak: Salt the steak before searing or grilling. Ideally, take it out of the refrigerator about an hour beforehand to bring it to room temperature. Approximately 20 minutes before cooking, salt the steak, as it draws out moisture from the meat. Once the salt crystals become "watery," pat them dry with kitchen paper; this creates a beautiful "branding" during cooking/grilling. In other words, the surface caramelizes, resulting in the perfect color and roasted aromas for the steak.
