The Kaiserschmarren is a true delight and brings back memories of cozy days in Tyrol. With this simple recipe, you can prepare it at home to taste just like on the mountain hut.
Ingredients:
- 4 eggs
- 200 ml flour
- 400 ml cream
- Butter (approx. 1 tablespoon)
- Raisins (optional, preferably soaked in rum)
- Powdered sugar
- Plum compote
- Cold milk
Instructions:
1. Separate eggs: Separate the eggs into yolks and whites. Place the yolks in a bowl and keep the egg whites in another bowl.
2. Prepare the batter: Add the flour and cream to the egg yolks. Mix everything well until the batter is smooth without lumps.
3. Beat egg whites: Beat the egg whites until stiff peaks form.
4. Fold in egg whites: Gently fold the beaten egg whites into the batter. This will make the Kaiserschmarren especially fluffy.
5. Preheat pan: Heat an ovenproof pan on the stove and add about a tablespoon of butter. Let the butter melt and spread it evenly in the pan.
6. Fry the batter: Pour the batter into the pan and fry it over medium heat for about one minute.
7. Add raisins: Now, sprinkle the raisins over the batter. If you soaked them in rum, they will be especially flavorful.
8. Bake: Place the pan in the preheated oven at 180 degrees Celsius and bake the Kaiserschmarren for about 10 minutes until it turns golden brown.
9. Tear into pieces: Use two forks to tear the Kaiserschmarren into pieces. This gives it its characteristic shape.
10. Continue baking (if necessary): If the Kaiserschmarren is still too liquid inside, you can place the pan back on the stove and continue baking until it reaches the desired consistency.
11. Serve: Divide the Kaiserschmarren onto plates, generously dust it with powdered sugar, and serve it with plum compote and a cold glass of milk.
