A traditional Tyrolean leftover dish
Transforming leftover Sunday roast and potatoes into a delightful dish is easy with this cooking tip. Try making delicious Tyrolean hash!
Ingredients:
- Approximately 200g of roast meat, sausages, and bacon
- 500g of boiled potatoes
- Salt, pepper, caraway, and marjoram to taste
Instructions:
1. Dice an onion and sauté it in oil, butter, or clarified butter until translucent. Add the sliced roast meat (a bit of bacon or local sausages work well too).
2. Next, slice the potatoes thinly and add them to the pan. Cook everything together over medium heat (avoid stirring too frequently to prevent turning it into mashed potatoes).
3. Season with marjoram, caraway (I prefer ground), salt, and pepper.
4. Just before serving, prepare a sunny-side-up egg in a separate pan. Arrange the hash on a plate, top it with the fried egg, and garnish with fresh or dried parsley if available.
